How to pickle onions

Pickled onions are one of the integral ingredients of many dishes: salads, appetizers, sandwiches or can be an independent side dish.  During the season of kebabs, without pickled onions, it will not be possible to cook appetizing and juicy meat, so its proper preparation affects the taste of the whole dish as a whole. You can pickle onions for a long time, or quickly, using the “express method”. Consider different options for how to pickle onions so that they add the necessary piquancy to the dish.

You can pickle any onion: white or red. Vinegar is usually used as a marinade, but lemon juice, cucumber pickle can also be used.

Recipe number 1 onion marinade with vinegar

Cut the required amount of onions with rings, or half rings and put it in a half -liter glass jar. Take a saucepan, pour a glass of water into it, add three tablespoons of sugar and half a tablespoon of salt, mix and put on fire until boiling. Then add about 70 ml of 9% vinegar to the boiling solution and immediately pour the onion in the jar with the resulting marinade. Close the jar with a lid and leave to cool completely, about 1.5 hours. You need to store pickled onions in the refrigerator, or any other cool place.

You can pickle onions with spices. To do this, you will need: onion, vinegar 3%, cloves, bay leaf, black peppercorns, dill (parsley) – optional.

Finely chop the onion into half rings, pour boiling water over it and put it in a ceramic (glass) dish with a deep bottom. Sprinkle 1 tbsp sugar on top.l.), put the bay leaf and other spices, herbs. Mix everything thoroughly and press the onion well. Pour everything with vinegar so that it completely covers the onion. If desired, you can use lemon juice, soy sauce or Worcestershire sauce. As an appetizer, you can pickle the whole onion. Take the smallest onion heads, peel them and dip them in boiling water for 3 minutes. After that, immediately place the onion in a jar of cold water. Prepare marinade: boil 0.5 l. water with 1 tbsp sugar, 2 tbsp.l. salt, cloves, allspice and bay leaf. Add half a liter of 9% vinegar to the boiling solution and pour whole onions into it, close the lid. After a few hours, the onion heads will marinate, and you will get a delicious snack for any dish.

To prepare pickled onions with lemon juice, you will need: onions, 1 lemon, 1 hour.l. sugar, 1 hour.l. salt, 1 teaspoon vegetable oil, water, ground pepper, herbs optional.  Cut the onion into half rings, put in a bowl. Prepare the marinade in the following way: squeeze the juice of a lemon, add 50 ml of water to it (at a temperature of about 50 degrees Celsius), sugar, salt, vegetable oil and pepper (if you use greens, then it too). Thoroughly mix the marinade, pour over the onions. Marinate the onion until the marinade has cooled down. Use ready-made onions in salads, as an appetizer for meat dishes, etc.d.

Recipe number 5 “Express marinade” onions

This recipe is perfect for a side dish for herring or meat. All you need is onions, salt, water, vinegar and a microwave. Onion and cut into rings, place in a microwave-safe dish. Cover the onion with water and add 1 teaspoon of salt and 4 tbsp.l. vinegar 9%. Put the dishes in the microwave at full power, preheating time -10 minutes.
